Take a peek in your freezer. Did you save any summer fruit for the overcast days of winter? Now’s the time to use them up before freezer burn sets in. Try this easy Blueberry Compote recipe as a topping for pancakes or waffles. You can make it ahead of time and store in the refrigerator until ready to serve.
Blueberry Compote Recipe
- 2 cups blueberries
- ½ cup sugar
- 2 tablespoons water
- 1 tablespoons lemon
- 1 tablespoons lemon zest
Combine the ingredients in a saucepan and cook over medium heat until the blueberry skins have popped and the mixture is slightly thickened, about 5 minutes or longer. Let cool and refrigerate until ready to serve.
